Comece preparando o recheio: coloque o chocolate picado em um refratário com o suco de limão e o creme de leite e leve ao banho-maria ou microondas por cerca de 1 minuto, potência média, mexendo na metade do tempo. Misture até que o chocolate derreta completamente. Cubra com filme-plástico e leve à geladeira por cerca de 2 horas ou até ficar firme. Retire a massa da geladeira e, com o auxílio de 2 colheres de chá, modele pequenas trufas, colocando-as em seguida sobre papel-manteiga. Leve novamente à geladeira. <br /><br /> 2. Prepare a massa: derreta o chocolate branco. Junte a manteiga e misture bem até que todo o chocolate tenha derretido. Reserve. Coloque os ovos, o açúcar e as raspas de limão na batedeira e bata por 3 minutos em velocidade média. Junte o chocolate derretido e misture com uma espátula. Por último, acrescente a farinha peneirada e continue misturando até obter uma massa homogênea. <br /><br /> 3. Unte forminhas próprias para petit gateau com manteiga e enfarinhe-as. Preencha-as com massa até a metade, coloque uma bolinha do recheio de limão bem no centro de cada uma delas e complete-as com massa até ¾ da capacidade. Asse os petit gateaux em forno alto (250ºC – preaquecido) por cerca de 7 minutos ou até que as bordas estejam firmes e o centro ainda esteja mole.
